Hand-crafted cheese from the Foothills of the Carolinas



Another recipe of our own creation, this is the hardest cheese currently in production and extremely versatile in its applications. Creamy with a complex finish notes of toast, butterscotch, and hazelnut. With a natural, salt-brushed rind, these wheels show appropriate salinity on the palate. The texture is firm, and occasionally contains the satisfying crunch of crystal formation.
