Utilizing milk from Indian Crest Farm in Tennessee, this blue has developed character and complexity for the Penicillium blue cheese mold to grow. The resulting cheese offers two, quite distinct flavors in one slice – astringent and saltine driven blue near the rind and a center which is rich and meaty, with a mild spiciness that lacks in typical "blue" flavor. Firm and crumbly in texture.
