A semi-firm, alpine-style cheese from a 120 lb. wheel made from 140 gallons of cow's milk. Similar to a Swiss Gruyere, this Grand Reserve edition of our Mont Sassafras cheese is mild and sweet with a very low salt content, but a good amount of suspended fats. Finishes with a slightly tangy notes reminiscent of sourdough.
