Named after the tallest waterfall in South Carolina, the sheep’s milk used for this cheese comes from Indian Crest Farm in Tennessee. Dense in both texture and flavor with mild crystallization. Notes of marzipan and baking spices. Hard enough to shave yet melts on the palate.
