At Blue Ridge Creamery, we source all our cow’s milk from a Southern Oaks Jersey in Abbeville, South Carolina whose cows are raised on pasture year-round, without the use of hormones or antibiotics. Jersey cows are prized by cheesemakers since their milk contains more proteins and butterfat than other breeds.
Our sheep’s milk is sourced from Indian Creek Farm in New Market, Tennessee. Sheep dairies are a rarity in the state, so we’re excited to have access to milk that allows us to make unique cheeses.
Not only does it feel great to support family farms doing things the right way, the result is a difference you can taste. Like fine wine or barrel-aged whiskey, an artisinal cheese is a reflection of the unique combination of milk type, soil, water, season, and aging process.
