We couldn't do what we do without a steady supply of fresh milk. We've partnered with farmer Mark Wiley of Southern Oaks Jersey Farm whose cows are raised on pasture year-round, without the use of hormones or steroids. Jersey cows are prized by cheesemakers since their milk contains more proteins and butterfat (flavor!) than other breeds.
Not only does it feel great to support a family farms doing things the right way, the result is a difference you can taste. Like fine wine or barrel-aged whiskey, an artisinal cheese is a reflection of the the unique combination of milk type, soil, water, season, and aging process.
